Established by Master Chef Hooi Kok Wai, one of the Singapore’s “Four Heavenly Chefs” back in 1963, Dragon Phoenix is renowned for classic creations such as Phoenix Spring Chicken, yam basket, Kyoto pork ribs and chilli crab. Master Chef Hooi and the other three local Master Chefs, namely Master Chef Sin Leong, the late Master Chef Tham Mui Kai, and Master Chef Lau Yoke Pui, are also credited with creating yu sheng in the early 60s. This festive dish served during Lunar New Year involves diners tossing sliced raw fish in homemade sweet-sour sauce along with other colourful ingredients. It is now a must-have for Lunar New Year celebrations in Singapore; as custom dictates, the higher you toss, the better your luck and fortune for the coming year.
