Outlet Description:

Birthed in the mid-1960s as Sin Leong Restaurant after its famous chef-founder, one of Singapore’s culinary ‘four heavenly kings’, this sprawling eatery was re-named when chef Sin Leong eventually retired and passed the reins to his godson, Roland Lim. Roland’s parents founded Palm Beach Seafood back in the late-1950s: signatures from both heritage establishments can now be found on Roland Restaurant’s menu. Among them are roast duck, chilli crab – Mrs Lim’s recipe, reputedly the original Singaporean rendition – and many Cantonese and Teochew favourites, with seafood as the prevailing theme.
